Today I’m making my daughter’s favorite: Marshmallow Fudge Brownies.
Marshmallow Fudge Brownies were another one of my mom’s favorite sweet treats to make for the holidays, but she also made them to take to many family gatherings and potlucks. In later years, she found a shortcut to make these brownies using a box mix, but they just weren’t the same as the original!
Here’s the recipe. Again, we don’t know the origin of this recipe, but I do know that this one has been around a long, long time.
Brownie Recipe:
- 2/3 C cocoa
- 4 T shortening
- 1 C butter
- 4 eggs
- 2 C sugar
- 1 T vanilla extract
- 1/4 t salt
- 1 C flour
Preheat oven to 350F. Grease a 9 x 13″ baking pan. In a large saucepan, combine cocoa, shortening and butter. Heat over low heat until melted and smooth, stirring occasionally. Remove from heat. Beat in eggs, sugar, vanilla and salt until thoroughly blended. Stir in flour, blending well. Spread evenly into bottom of the greased baking pan. Bake 25 to 30 minutes. Do not overbake.
Fudge Marshmallow Icing
- 2/3 C cocoa
- 4 T shortening
- 1 C butter
- 2 eggs
- 1 T vanilla extract
- 3 3/4 C powdered sugar
- 4 C miniature marshmallows
In a medium saucepan, combine the cocoa, shortening and butter. Heat over low heat until melted and smooth, stirring occasionally. Remove from heat and add eggs, vanilla and powdered sugar, beating until smooth. Stir in the marshmallows.
Pour the still-warm icing mixture over the cooled brownies.
Chill in refrigerator for a few hours or overnight before cutting.
